Cottage Cheese & Cucumber Toast

Ingredients

Ezekiel OR Daves killer break- sprouted wheat if possible
1/4c low-fat cottage cheese
1 English cucumber
2 tbsp fresh dill
3 tbsp white wine vinegar
1 tbsp sugar
1 garlic clove, minced
Salt & Pepper
1/2tbsp hot honey- regular honey if you don’t like spice


Instructions

Dice the cucumber into very small pieces.

Combine with minced/crushed garlic, fresh dill, sugar, & white wine vinegar in a bowl.

Set aside to marinate in the refrigerator for at least 30 minutes.

Toast the bread.

Spread a layer of cottage cheese on your toast. You can also whip the cottage cheese in a blender if you want a lighter, smoother, texture.

Top the cottage cheese with the marinated cucumber salad.

Finish with a small drizzle of hot honey, salt & pepper.
